What ethnic foods do you like?

Italian food, it is by far the best cuisine in the world.

Indian food, ehh, I like butter chicken and chicken tikka marsala but these are not authentic indian dishes. Likewise, General Tso's Chicken is not real Chinese dish but I like it. Sushi is quite good if you source it well. Greek food is not bad, I enjoy some of it but not all of it. I prefer Italian food.

All of that is very possible.
And the south has better food than the north.

However, if you can, I'd advise you to try french cuisine sometimes.
Not just baguettes or single ingredients like wine or cheese but high end gastronomical cuisine, which birthed in france. Obviously it costs a shit ton of money so you may not have that opportunity often but the idea remains. For comparison's sake.

But alright your experience sure is your experience, not denying or diminishing that.
I've tried a lot of the basic stuff, and it's ok. I haven't had the opportunity to try the higher end stuff so I will definitely do that.

Also while German beer is a bit overrated, it's still good. I've had a decent amount of Belgian beer, and it is pretty mid. I honestly prefer Canadian beer. Try Moosehead if you get the chance.

Arab mixed grill. Greasy fucking chicken, greasy fucking beef/lamb, greasy fucking fries, all dipped in حمس
 
Ethnic? Well I guess it's a stereotype but I do enjoy a nice indian curry with some poppadoms, and chinese sometimes.
 
Chinese Italian and Turkish food are all fucking amazing
i went to Istanbul this summer and I went to so many goddamn shawarma places I can't even remember most of them
almost all of the time the service was top tier too
