Usually comes with sadism, same kind that comes with child sadism. Human gore can come from different circumstances (killings, accidents, anatomical complications, self inflicted) but the usual demographic for animal gore is people who are into it, which is why a lot of it is considered illegal under US law.
Part of what attracts foodists is what is illegal, and it's proven that with a lot of people shock content regarding harm inflicted in animals can be more shocking than with humans, which is why foodists use it.
