Given time, I like to cook my own bolognese sauce fancy style, I can also bake, so yeah depends.

If you have less than two hours and not much money, make some good smashed potatoes ig. buy some pickles, some onions, bake or steam the skinned potatoes, smash them, then add a bit of olive oil and milk, cut your pickles and onions into small pieces and mix together. Add salt pepper and whatever spices go well with it and you already have a good dinner. Ofc. better with a steak

10-20 minutes is really really short lol, but it's fine for some dishes.
If you want to cook in that time something good and if you like meat, I advise you to make a dish that requires only a pan to cook everything at the same time.
So you can make a carbonara sauce for pasta, which doesn't take a long time, and only needs cream, some minced bacon, onions and whatever you wanna add (I hate cheese but ig it's more traditionnal to use cheese than cream). Depending on how fancy you wanna your carbonara you can add a lot of things but it really doesn't take that long to cook usually.

Then you can make some white beans cowboy style, something I enjoy a lot too.
Simple, you only need a frying pan.
Onions and bacon in the pan with a bit of oil or butter, let it cook til golden brown, then add the beans. Add a bit of curry and a spoon of mustard, salt and pepper, mix well, and cook on low heat for like 5 minutes or so. You can also add or change things here, for example adding shallots, other spices, whatever.
