I don't think that my family has ever used salted butter regularly, if at all. If it is to be used to preserve it, I would expect a person who salts their butter for that purpose to lack refrigeration.

His recipes are excellent no doubt but as a person he just strikes me as an arrogant asshole. I remember him saying that the founder of Taco Bell was complicit in "appropriating Mexican culture" (GEG)
